A fusion dessert – gajar halwa mixed with whipped cream

Here are easy steps to make mouth watering Gajar Halwa that you absolutely love at home.


  • Carrots (gajar) grated 2 cups

  • Milk 1 1/2 cups

  • Ghee 2 tablespoons

  • Sugar 1/4 cup

  • Green cardamom powder 1 teaspoon

  • Mawa / Khoya grated 1/4 cup

  • Saffron strands a few

  • Pistachio blanched, peeled and sliced 6-8

  • Whipped cream 1 cup


  • Heat ghee in a non-stick pan, add carrots and sauté for five minutes. Add milk and cook till all the milk evaporates and the carrots are cooked.

  • Add sugar and mix well. Add cardamom powder, mawa / khoya and saffron and mix again. Remove from heat and cool down to room temperature.

  • Reserve some pistachios and add the remaining to the gajar halwa.

  • Reserve one-fourth of the gajar halwa and mix the rest with whipped cream. Pour the mixture into a piping bag and pipe out in shot glasses.

  • Put the reserved halwa on top of each glass and garnish with reserved pistachios. Refrigerate for one to two hours.

  • Serve chilled.
