Here are easy steps to make mouth watering Gajar Halwa that you absolutely love at home.
Carrots (gajar) grated 2 cups
Milk 1 1/2 cups
Ghee 2 tablespoons
Sugar 1/4 cup
Green cardamom powder 1 teaspoon
Mawa / Khoya grated 1/4 cup
Saffron strands a few
Pistachio blanched, peeled and sliced 6-8
Whipped cream 1 cup
Heat ghee in a non-stick pan, add carrots and sauté for five minutes. Add milk and cook till all the milk evaporates and the carrots are cooked.
Add sugar and mix well. Add cardamom powder, mawa / khoya and saffron and mix again. Remove from heat and cool down to room temperature.
Reserve some pistachios and add the remaining to the gajar halwa.
Reserve one-fourth of the gajar halwa and mix the rest with whipped cream. Pour the mixture into a piping bag and pipe out in shot glasses.
Put the reserved halwa on top of each glass and garnish with reserved pistachios. Refrigerate for one to two hours.
